You certainly know the small, hard Amarettini biscuits. But do you also know the big siblings, Amaretti morbidi? These are soft and crumbly and unbeatably delicious.

You’ve probably seen them before on vacation in Italy. There they are available individually wrapped in colored tissue paper.

What are Morbid Amaretti?

The Italian word amaro means bitter, and since these little biscuits are flavored with bitter almonds, they were called amaretti – literal translation: the “little bitter ones”.

Made from ground almonds or almond paste paired with sugar and egg white, they can take on slight variations in shape and flavor. Often these little Italians are flavored with chocolate or liqueurs.

Traditionally served with dessert wines, liqueurs and especially coffee, they are also a delicious complement or main ingredient in many desserts.

The best known are Amaretti soffici in the form of small domes, about 3-5 cm wide, brown in color and covered with many cracks. Light and crunchy, these little biscuits not only smell wonderful but melt in your mouth, revealing a delicious almond flavor that is harmoniously balanced by the sugar.

The history of Italian amaretti morbidi.

The romantic legend of the origin of Amaretti soffici refers to a couple from Saronno who owned a bakery. In 1719 a cardinal from Milan was visiting the local church and the bakers wanted to make a special biscuit for the occasion, but only had ground apricot kernels, sugar and egg white.

After baking at a certain temperature, the small Amaretti morbidi were wrapped in thin, beautifully decorated paper as a gift.

These little “bitters” pleased the bishop so much that he blessed the two bakers with a happy and lifelong marriage, so that the secret recipe was preserved for many generations.

However, early records indicate that they originated in Venice in the late Renaissance (mid-17th century) and were invented by Francesco Moriondo, a pastry chef at the Savoy court.

Whatever you choose to believe, there’s no doubt that amaretti biscuits have been a part of fine Italian confectionery for hundreds of years.
