It is often assumed that Italian espresso beans are a special type of coffee bean.

In truth, these beans are nothing more than regular coffee beans, which only qualify through the special refinement and special type of preparation. In addition to the roasting, factors such as the correct degree of grinding and the amount of water play an important role. Whether Italian espresso beans or coffee beans, both come from the coffee plant.

The roasting process in particular is decisive for the creation of an espresso bean. A correspondingly darker degree of roasting is selected here. So there is no such thing as a special espresso bean. It is obtained from a variety of different types of coffee trees.

The primary distinction here is Arabica, which is grown in the highlands, and Robusta, which is cultivated in the lowlands.

Arabica and Robusta briefly explained.

The Arabica bean is longer and larger than the Robusta bean. It is also characterized by a central, curved incision, which runs in a straight line on the Robusta.

Robusta beans are grown in the lowlands and have a significantly shorter growing season due to the warmer temperatures. It only takes 6-8 months to duck.

At 900g, the annual production of a Robusta plant is considerably higher than that of the Arabica plant, which delivers an average of 700g per year. Arabica plants grow in the highlands under more difficult climatic conditions and therefore need almost a year to grow. Incidentally, the name Robusta goes back to the high resistance of the bean to diseases, heat and pests. Arabica, on the other hand, is much more susceptible.

Incidentally, the Robusta bean is characterized by twice the caffeine content of the Arabica bean. However, the latter has significantly more aroma and scores with a fuller taste. At Cellini, we very often use blends in our compositions in order to ideally combine the advantages of both types of coffee.

Robusta is chocolaty in taste, full-bodied and spicy. At the same time, this type of coffee guarantees a rich crema, which on the one hand preserves the aroma of the coffee and on the other hand fills the palate in a pleasant way. Arabica creates the mild balance and contributes pleasantly sour and sweet notes.

How does the coffee bean become the espresso bean?

Our master roaster Umberto Durante calls this process refining. At Cellini, the espresso beans are roasted slowly, gently and evenly at around 220 degrees for 18-20 minutes, depending on their provenance. The coffee oils inside the bean rise to the surface.

These oils are responsible for the typical crema forming when preparing an espresso. The significantly longer roasting time of Italian espresso beans helps to reduce the caffeine and acid content. This is what makes espresso so digestible and delicious. Due to the short contact time between the water and the espresso powder, only half as much caffeine gets into the finished drink when it is prepared in a fully automatic coffee machine or an espresso machine.

That is the reason why you can also enjoy an espresso wonderfully in the evening after a nice meal. Incidentally, blends with a high Arabica content have the lowest caffeine content. However, you should rather avoid adding milk in the evening, because this in turn ensures that the caffeine breaks down more slowly in the body. With a pure espresso, the stimulating effect is gone after just 20-30 minutes.

How do you prepare an espresso perfectly? In a traditional filter carrier machine you need between 7 and 8.5 g of finely ground coffee powder for an espresso. Be sure to press down the espresso powder in the portafilter well with a tamper.

25 to 30 ml of finished espresso are then brewed in a preheated espresso cup in a period of approx. 25 to 30 seconds. If the espresso runs through too quickly, one speaks of so-called under-extraction, then the contact time between the hot water and the ground coffee is too short. Your grind is set too coarse. Only a moderate crema forms and the espresso is not as aromatic as it should be.

In the opposite case one speaks of over-extraction. Here the degree of grinding is so fine that the contact time between water and ground coffee is too long. As a result, too many bitter substances are released. The water temperature should be between 88 and 94 degrees Celsius.
