It doesn’t matter whether you use a capsule system, a fully automatic coffee machine, an espresso machine or an espresso maker at home. Why is coffee decaffeinated?

Some coffee lovers have trouble falling asleep, stomach problems or even general discomfort after drinking coffee.

Many consumers attribute all three of the undesirable side effects to caffeine and expect to enjoy decaffeinated coffee without regrets. Decaffeinated coffee actually loses the stimulating effect completely.

However, the acids and bitter substances contained in the coffee, which are found in particular in industrially roasted coffee of inferior quality, are largely responsible for the other complaints. Here the coffee beans are briefly roasted for just a few minutes at around 800 degrees. In this way, large quantities of coffee can be roasted in a very short time, but the time is far from sufficient to break down the acids contained in the coffee.

At Cellini Caffè, we have been refining coffee exclusively using traditional and gentle drum roasting since 1946. We take up to 20 minutes to turn a coffee bean into a Cellini bean. The result is even and gentle roasting. By the way, an espresso by itself contains only half as much caffeine and irritants compared to conventional filter coffee. The reason lies in the preparation. The hot water is pressed through the espresso powder quickly and with high pressure in the pressure process and can quickly release significantly less caffeine and irritants.

Arabica beans, on the other hand, have half the caffeine content of Robusta beans. At Cellini Caffè, we always rely on a very high proportion of Arabica in our compositions.

How is decaffeinated coffee made?

Caffeine can be removed from coffee beans in many different ways. This process always takes place before roasting. The EU directive states that decaffeinated coffee may contain a maximum of 0.1% caffeine. At Cellini we use the carbon dioxide process. In this particularly gentle process, which is completely harmless to health, the coffee beans are first prepared in a pressure chamber with steam and then flushed with liquid, supercritical CO2 at a pressure of between 73 and 300 bar.

The carbonic acid formed from water and CO2 dissolves the caffeine contained in the beans, and the CO2 then evaporates without leaving any residue as the beans dry. It can be condensed and reused.

Only after the caffeine has been removed from the coffee beans are they roasted like regular, caffeinated beans. All ingredients that make up and determine the later taste and aroma of the roasted coffee are almost completely preserved in the carbon dioxide process.

Bitter and irritant substances, on the other hand, are greatly reduced, which makes decaffeinated, decaffeinated coffee particularly digestible. This method is the most laborious process to extract caffeine from coffee beans, but it does not require any chemicals and produces a very aromatic coffee. Enjoy it!
