Italian Cookies: Biscotti & Tozzetti.

What is the difference between biscotti and tozzetti? The answer will surprise you.

There is no. Biscotti means twice baked and that’s actually how all types of biscuits are called in Italy. So biscotti is a generic term, if you want to go into more detail you should use the term “cantuccini” or “tozzetti”.

Tozzetti are crunchy dessert biscuits made exclusively in Umbria and Lazio. They are prepared in a similar way to cantuccini, but hazelnuts are often used instead of almonds. In addition, the ingredients are more varied. These Italian biscuits are often refined with pieces of chocolate, pistachios, raisins or pine nuts. However, the basic recipe for making the dough is identical to that of the Cantuccini. In summary, one can say that tozzetti are biscuits whose ingredients differ regionally.

Amaretti.

Another specialty of the Italian Pasticceria are Amaretti. The main ingredient in Italian cookies is almonds. When there is still snow north of the Alps, the almond trees in Sicily are already in bloom. After many dry months, the ripe almonds are harvested by hand in midsummer. Incidentally, the almond macaroons go back to the Sassanid Shahs, who consumed a sweet confectionery for their New Year celebrations.

The pastry came to Europe in the 9th century. Italian amaretti consist of ground almonds, protein and sugar. The pastry tears open a little on the surface when drying in the oven, but remains soft and juicy on the inside. In Italy, Amaretti is not only available at Christmas. Ricciarelli.

If you’ve ever been to Tuscany, you’ve probably come across the Italian Ricciarelli Almond Cookies.

A legend says that the biscuits reached Siena from the Orient after the end of the Crusades. The Italian sweet pastry is made from finely ground almonds, icing sugar and egg white and refined with flavors such as orange zest, lemon or vanilla. Ricciarelli are baked in an oval shape. Underneath its rough surface, which is thickly sprinkled with icing sugar, is a tender core that melts in your mouth.

Cantuccini.

Cantuccini are a traditional sweet almond pastry from the Italian province of Prato near Florence. But cantuccini or cantucci are now highly appreciated throughout Italy and beyond.

Similar to German Zwieback, they are baked twice, first as long loaves and then sliced again, making them tender and durable. In Tuscany Cantucci and Vin Santo are an absolute culinary symbiosis.
