In Italy, this traditional cake is a sign of spring and especially of the Easter season. In the meantime, however, this airy, buttery, highly aromatic pastry has a large fan base in this country as well.
Every year we look forward to the return of the Colomba di Pasqua, translated, the Easter Dove. The springtime counterpart to the winter panettone is traditionally made with high quality flour, fresh eggs, sugar, butter and of course yeast.
According to a beautiful legend, the city of Pavia is said to have appeased the wild Lombard king Alboin in 571 with a dove of peace baked as an Easter cake.
Its airy, buttery yeast dough is enriched with fine orange zest. A delicate glaze covers the highly aromatic fragrant Easter cake. In Italy, it is enjoyed during Easter with an espresso or with a glass of spumante as a dessert.
The Colomba Pasquale of Boella & Sorrisi is baked Turin and then beautifully packaged by hand. To enjoy the sweet flavor of your Colomba to perfection, we recommend keeping the cake at room temperature for two hours before serving.
