Traditional drum roasting.

Traditional drum roasting, which we have been using and developing in Genoa for decades, is a manual roasting process that leads to highly aromatic and particularly wholesome coffee because it gets the best out of the bean.

In contrast to hot-air roasting in industrial roasting plants, the temperature curve in traditional drum roasting is much flatter. The principle is simple: the beans lie in a drum that rotates around its center. Because the drum is heated from the outside, the heat not only reaches the beans through contact with the drum, but also through the heated air inside the drum and roasts them gently.

One of the most important effects of gentle drum roasting is the so-called Maillard reaction. In the process, new compounds are formed from the amino acids, various sugars and proteins, from which over 800 aromas arise. You know the “Maillard reaction” from the kitchen: it ensures a crispy crust on bread in the oven or the fine taste of roasting when meat is sizzling in the pan. Industrial, fast roasting processes cannot keep up in terms of quality. The so-called Tostatura Lenta not only takes more time than traditional craftsmanship, but also a lot of experience, knowledge and sensitivity. But you can taste it with every sip while enjoying coffee: the effort is worth it.

Zone 1:

Central America, where mainly washed Arabica coffee is cultivated and only a small proportion of Robusta coffee (Guatemala) is grown.

Zone 4:

Asia cultivates both Arabica and Robusta coffee in India, Indonesia, New Guinea and Vietnam. Only Robusta is grown in Thailand, Laos and Cambodia.

Zone 2:

South America, one of the main coffee producers in the world, especially Brazil with large acreage of Arabica coffee.

Zone 3:

Africa, where Robusta coffee is produced in Central/West Africa and Arabica coffee in Central/East Africa.
