Start > Traditional drum roasting
Traditional drum roasting, which we have been using and developing in Genoa for decades, is a manual roasting process that leads to highly aromatic and particularly wholesome coffee because it gets the best out of the bean.
In contrast to hot-air roasting in industrial roasting plants, the temperature curve in traditional drum roasting is much flatter. The principle is simple: the beans lie in a drum that rotates around its center. Because the drum is heated from the outside, the heat not only reaches the beans through contact with the drum, but also through the heated air inside the drum and roasts them gently.
One of the most important effects of gentle drum roasting is the so-called Maillard reaction. In the process, new compounds are formed from the amino acids, various sugars and proteins, from which over 800 aromas arise. You know the “Maillard reaction” from the kitchen: it ensures a crispy crust on bread in the oven or the fine taste of roasting when meat is sizzling in the pan. Industrial, fast roasting processes cannot keep up in terms of quality. The so-called Tostatura Lenta not only takes more time than traditional craftsmanship, but also a lot of experience, knowledge and sensitivity. But you can taste it with every sip while enjoying coffee: the effort is worth it.

Our goal: perfection
For years it has been part of our company DNA to maintain our selection criteria for green coffee beans and to improve them where possible. Our focus is on the selection of the best growing areas, strict analyzes by our quality laboratory and numerous tests of the end product in the cup. The desired result: a coffee of high quality, which is the result of striving for perfection and with great passion. So that in the end every product under the Cellini brand differs from other coffees.
Selection: By expertise
Maintaining this quality that has made Cellini coffee famous throughout the world is the great challenge we face every day. To achieve this goal, a Cellini team is busy selecting the raw materials. Before purchasing green coffee from a country of origin, a sample is sent to our laboratory and approved by us. Our experts examine every aspect: colour, weight and size of the individual beans – every little detail is carefully examined.
Origin: Best choice
The climate belt with warm, humid weather in the southern and northern tropics includes the most important coffee-producing countries, which can be divided into four geographical zones that you can see on the map.
